DipTacular Recipes – Spinach Rotel Dip

Happy Friday, y’all!

You know how I love a good (but easy) recipe. Well, today, BooMama is hosting a “Diptacular” recipe collection – all different flavors of dips. Even the titles of these recipes are making me hungry! I linked to my Spinach & Bacon Rotel Dip (previously posted). But in case you’d like the recipe again, here it is:

Easy Spinach Rotel Dip

1 pkg. frozen chopped spinach – thawed, drained, and chopped into small pieces
1 lb. Velveta cheese – cut into cubes
4 oz cream cheese – cut into cubes
1 can RoTel tomatoes – undrained
8 slices of bacon – cooked and crumbled (may substitute “Real Bacon” bits)

Combine in microwave bowl and heat for 5 minutes, stirring after each minute. Transfer to a small slow cooker (like the Crock Pot “Little Dipper”) to keep warm. Serve with tortilla chips or crustini.

Thank you for your passion for the public schools and trying to redeem them for the glory of God. My husband and I feel very firmly that the best choice for our children will be to homeschool them, but I do appreciate your passion and purpose in your choice. Praise God!
