Easy, Summery Lemon Cookies

I just love these cookies! They are easy, light, delicious “go to” cookies for the summer. If you like lemon, you’ll like these cookies.

Summer Lemon Crisp Cookies

1 box Super Moist lemon cake mix
1/3 cup shortening
1/3 cup butter or margarine, softened
1 egg
Granulated sugar

Oven – 375°F (350°F for dark or nonstick cookie sheets).

Mix cake mix, shortening, butter, and egg on medium speed for 2 minutes. Roll the dough into walnut sized balls, and place on a *cookie sheet 2 inches apart. Dip the bottom of a drinking glass in sugar and press the cookie flat. (Sprinkle additional sugar on top, if desired.) Bake 9-12 minutes or until the cookies are light brown around the edges. Cool and remove from cookie sheet.

I sometimes ice these with lemon frosting (from a can), and sometimes I sprinkle them with extra sugar or with colored sugar crystals.  Sometimes I do all three. 😉  However they are finished, they’re delicious!

Edited to add a comment from my friend, Sandi:

Here is a great cookie frosting tip. I saw this on a can of frosting (I think). Take a can of vanilla or cream cheese frosting, and mix in 1 envelope unsweetened kool-aid powder. It makes pretty, tasty frosting. I have used the lemonade and pink lemonade. Tart and sweet. Great on vanilla cookies. or Lemon cookies.

Thanks, Sandi, for sharing this!

Now… I have two favors to ask of you.

1.  “Smelling Coffee” now has a facebook page ~ Thanks to Kim of Recipes to Run On.  She suggested that I make a page, and I had no idea how to even begin.  So she kindly made it for me.  Now I just need some friends to be a part of it (grin).  So, I’m humbly asking my Smelling Coffee blog friends if you’ll “like” Smelling Coffee on facebook.  (You can do that to the left of my blog, or you can search for “Smelling Coffee” on facebook and like the page.) Thank you ever so much. 😉

2.  I’m heading to my hometown to speak at a Ladies’ event on Thursday night.  Would you please pray for me and for those who will hear the message?  I absolutely know that without the power and the presence and the leading of the Holy Spirit as I speak, we’d all be wasting our time.  I never agree to speak at an event unless the Lord has given me the “go ahead”.  So for Thursday night, I know that HE has a Word for those who are attending.  Will you join me in praying that God’s Word will go forth, and that everyone will hear it in a language they will understand?

May God be glorified in all we do… presently specifically in those lemon cookies, that Smelling Coffee facebook page, and in Thursday night’s event!

Thank  you for being a special part of what God is doing in and through this life I’m living.  With sincerity I say, Much love to each of you~
Jennifer

  1. We loved the Lemon Cookies! I added 2 tiny leaves of fresh rosemary to the top of each cookie before baking and they were so delicious! Next time I'm going to add a little chopped fresh rosemary leaves to the batter itself. I think this will only work with fresh rosemary—-not dried. With or without, these make wonderful little cookies with tea. Thanks!

  2. Love and prayers to you!
