Chocolate Chip Pumpkin Muffins: A Fall Favorite!

These muffins are one of those things that signify the arrival of fall.  No matter what the weather is, around our home you can know that it’s fall when we make the first pot of soup and the first batch of Chocolate Chip Pumpkin Muffins.  Last week I made FIVE batches at once (for the teachers at Abigail’s school), and we only got to eat a few of them.  This week, I’m making a batch or two for the Walkers and anyone else who happens to come into our home.  So… If you live nearby, come on over.  We should have some muffins and coffee together… let’s say… on Thursday? 😉

My sister passed this recipe on to me about 20 years ago.  I think it was originally a Pumpkin bread recipe, and someone brilliantly added the chocolate chips.  Then someone decided to make them into muffins. A star was born.  Hope you enjoy these as much as we do…

Chocolate Chip Pumpkin Muffins
Jennifer Walker
1 2/3 cup flour                           2 eggs
½ cup brown sugar                     1 cup pumpkin
½ cup white sugar                       ½ cup butter
½ Tbs. pumpkin pie spice           1 cup chocolate chips
½ Tbs. cinnamon
1 tsp. baking soda
¼ tsp. baking powder
¼ tsp. salt
Mix dry ingredients.  Melt butter then add eggs and pumpkin.
Pour this mixture into dry ingredients and mix well.  Add chocolate chips.  Bake at 350 until done.  (Don’t you just hate that?  I say “until done” because it is different depending upon the size muffins you are making.  I have faith that you’ll know when it’s done.)
This also bakes well in a loaf pan.
